At Folium, our menu is guided by a commitment to quality, seasonality, and sustainability. We work closely with small-scale farmers and ethical, independent fishermen from across the UK to source the freshest local ingredients.

Our approach includes whole-animal butchery, nose-to-tail and fin-to-scale use, and a deep respect for preservation techniques such as fermenting, pickling, and curing. These practices are at the heart of our cooking and help shape an ever-evolving menu.

Our short menu includes six courses, while the long menu features twelve servings, ranging from small bites to larger dishes.

Dietary Requirements

To ensure the best possible experience, we require at least 72 hours’ notice for any dietary requirements, as all ingredients are prepared fresh each day.

Due to the small size of our kitchen and the nature of our menu, we are unable to accommodate all dietary restrictions. If a request requires substantial alterations that compromise the integrity of the menu, we may not be able to accommodate it.

We cannot cater for: Vegetarian or vegan diets, No fish, No dairy, Lactose intolerance.

We can cater for, with advance notice: Pescatarian diets, Gluten-free diets, Pregnancy-related requirements, Nut-free (no nuts used)and Halal diets.

Please ensure all dietary needs are communicated at the time of booking. Unfortunately, unannounced dietary requests will not be accommodated.

Allergens are present in our kitchen. While we have procedures in place to minimise cross-contamination, we cannot guarantee a completely allergen-free environment. For guests with severe allergies, please contact us directly to discuss your needs before booking.
